Abstract (Abstrak)
Arenga Pinnata Merr is a plant that has many benefits such as sap, kolang kaling, ijuk and flour. The people of Lantibongan Village, Bontosikuyu District, Selayar Islands Regency process palm sap into batok sugar. This study aims to determine the processing process of palm sugar and calculate the income of craftsmen and traders of palm sugar retailers. This research will be conducted from December 2023 to February 2024. The data collected are primary data and secondary data. Primary data consists of respondents' identities, forms of palm processing, costs incurred during palm sugar processing and marketing, as well as the income of palm sugar artisans and retailers. Secondary data is in the form of data obtained from literature studies of various research results, literacy, and findings from related agencies, including the general condition of the region and other information related to research. The results showed that palm sugar processing in Lantibongan Village, Bontosikuyu District, Selayar Islands Regency is still processing traditionally, which includes tapping, cooking, printing, packaging and marketing. Retailers market their palm sugar in markets in the city. The income obtained by the community from palm sugar farming is Rp 559,205,167 / year with an average of 34,950,323 / year. Meanwhile, the income of retailer holders is IDR 332,891,667 / year with an average of IDR 66,578,333 /
year.
